i’m 100% on a pineapple kick as of late and i’m pairing it with coconut because you know, i’m such a visionary! also, how great is this tumbler?! it’s true, i really do love the s**t out of this drink and rum is my alcohol of choice. my ride or die. i’m still fantasizing about the most amazing pina colada i had in vegas 3 years ago! here’s a little how-to for a refreshing bevy on a hot day.
what you’ll need
first take this adorable pineapple and cut off the top and the bottom so you have a flat base to work with. start shaving down the sides, remove the core, and cut the remaining pieces into tiny chunks. (i don’t have a juicer so i had to make mine in a blender.) add the pineapple and blend until it’s liquified. if it’s having a hard time blending, just add a small amount of water. drape your cheesecloth over a bowl and pour the pineapple puree to separate the juice.
add 1 tablespoon of cream of coconut to the bottom of the glass for a stronger coconut flavor. fill the cup up with ice at this point, not when i did which was after adding everything…oops. next add about a quarter cup of pineapple juice and a shot of rum.
this cascade coconut soda has zero calories and is the most delicious soda i’ve ever had! pour over ice and top with whipped cream and sprinkles! i’m not going to lie, i probably added more rum than i should have, but i have no regrets.
